And yet, the cozonac turned out short and dense, with a crumb that crumbles instead of tearing into strands. Before you blame the yeast or the oven, look at the bag of flour. Most of the time, everything is decided there: a flour for cozonac must carry a load of butter, eggs, and sugar that ordinary supermarket flour struggles with.
Why Cozonac Is Among the Toughest Doughs
In baker's terms, cozonac is an "enriched dough": besides flour, liquid, and yeast, it contains a significant amount of butter, eggs, and sugar. All three give it its festive taste — and all three work against the dough.
- Butter coats the gluten strands like a film, preventing them from bonding.
- Sugar is greedy for water: it draws it to itself, leaving the gluten thirsty precisely when it needs hydration to form.

Think of gluten as an elastic net holding all this baggage, and simultaneously needing to expand with the gas produced by the yeast. The richer the dough, the stronger the net needs to be.
What Is the W-index and Why Supermarket Flour Fails
The W-index is the strength index of flour, measured in the lab with an alveograph: a dough sample is inflated like a balloon, and the machine measures how much energy it absorbs before it breaks. A small W means a balloon that bursts quickly; a large W means a dough that stretches, holds gas, and doesn't yield.
Universal white flour from the supermarket is designed for everything — pound cake, pancakes, simple bread — and usually has a modest W-index. For a light dough, it's sufficient. For cozonac, it's not: the gluten network breaks under the weight of butter and eggs, the dough rises little and tiredly, then collapses when baked. You already know the result — a dense crumb, crumbling slices.
For cozonac, another ratio matters: P/L, which is the balance between tenacity and extensibility. You need a dough that stretches into long strands for braiding, but that "holds its shoulders" during proofing. The difference from Artizanul is nuanced. Paznicul is made to "guard" the structure through long fermentations with pre-ferments, where the acidity accumulated during the waiting hours softens the gluten over time. For a cozonac with biga or poolish prepared the night before, it's the natural choice. For the classic recipe with yeast and a generous portion of butter, Artizanul remains the first option.
Mistakes That Weigh Down Cozonac, Even With Good Flour
The right flour doesn't forgive everything. We most often see three mistakes:
- Insufficient kneading. Enriched doughs require serious kneading — often 20–30 minutes by hand or 10–15 minutes in a mixer — because gluten bonds more slowly in the presence of fat. The golden rule: develop the gluten first; butter goes in last, gradually, cube by cube, only after the dough is well-bonded and elastic.
- Too short or too warm fermentation. Yeast works faster in the warmth, but above 26–28°C, the butter softens and migrates out of the dough, weakening the structure. A slower proofing, at 24–26°C — or even overnight in the fridge, with a strong flour that supports it — gives both a better structure and a deeper flavor. Cozonac baked too early hasn't had time to fill its gluten network with gas: hence the dense crumb at the base.
- All the sugar at once. Added from the beginning, in large quantities, sugar competes with gluten for water and can "break" the dough. Incorporate it in two or three batches, during kneading, and give the gluten a chance to hydrate first.
Mini Practical Guide: Hydration and the Windowpane Test
Hydration, approximate. For cozonac, "liquid" isn't just milk: eggs also count. Roughly, for 1 kg of strong flour, the total liquids (milk plus beaten eggs) amount to somewhere around 550–650 g, to which butter is added. A flour with 14% protein, like Artizanul, absorbs visibly more water than an ordinary one — if you switch to strong flour and keep the old recipe, the dough might seem too stiff. Correct with a little milk, spoon by spoon, not all at once.
The windowpane test. Take a walnut-sized piece of dough and slowly stretch it between your fingers. If it thins into a membrane that light passes through without tearing, the gluten is developed: you can add the butter, or, if it's already incorporated, you can proceed to proofing. If it tears with ragged edges, knead more. Other good signs: the dough cleanly detaches from the sides of the bowl and slowly springs back when you press it with your finger.
