How to choose flour for cozonac — the complete guide for the home baker

Cozonac is the most demanding dough in Romanian cuisine—not because the recipe is complicated, but because it's an enriched dough: the sugar, eggs, and butter that give it flavor all work against its structure. And the weapon that wins this battle isn't the mixer—it's the flour.

Why cozonac "punishes" ordinary flour

Fat coats gluten strands and prevents them from binding; sugar draws water from the dough just when gluten needs it. In a simple bread, flour has an easy life. In a cozonac, the same flour must bear 3–4 times more load—and still rise beautifully. Ordinary supermarket flour, designed for everyday bread and cakes, gives in: the cozonac rises in the oven, then collapses, comes out dense and crumbly, and dries out the next day.

W—the letter that separates fluffy cozonac from dense cozonac

On the technical sheets of professional flours, you'll find a number marked with W—the alveographic strength. In simple terms: how much load the dough can bear and how long its structure resists during proofing. A few guidelines:

  • W up to 200—fine pastries, biscuits, puff pastry. Delicate, does not support heavy doughs.
  • W 250–300—white bread, same-day pizza, baguettes. The everyday workhorse.
  • W 300–350—long-fermented pizza, focaccia, artisan bread.
  • W 380–420—the territory of cozonac and panettone: rich doughs, long proofing times, a structure that doesn't collapse.

The short rule: the richer the dough and the longer the proofing, the higher the W must be. For cozonac, below W350, you're playing an away game.

Protein and the patience of gluten

W doesn't come from nowhere: it comes from the flour's protein—for cozonac, look for at least 13.5–14%. Equally important is the P/L ratio (elasticity vs. extensibility): a P/L around 0.7–0.8 gives you a dough that stretches into long, silky strands—exactly that thin "window" you're looking for when you stretch the dough between your fingers (the windowpane test: if it stretches until it becomes translucent without tearing, it's kneaded enough).

The 5 mistakes that make cozonac "collapse"

  1. Flour that's too weak. The number 1 cause for dense cozonac. No technique can compensate for flour that can't handle the load.
  2. Butter added too early. Let the gluten form first (knead the basic dough until it comes together), then add the butter gradually, at the end.
  3. Too much yeast. A lot of yeast speeds things up but doesn't build: few flavors, fragile structure. Less yeast + longer time = crumb that pulls apart in strands, not crumbs.
  4. Proofing in forced heat. Above 28–30°C, the fat in the dough melts and the structure slides. Patience at 24–26°C beats a slightly open oven.
  5. Cut while hot. The crumb sets as it cools. A cozonac cut 10 minutes after coming out of the oven seems underbaked even if it's perfect.
