You’ve opened a flour specification sheet on artosgranos.ro and stumbled upon a short code: W290. No explanations, no reference. Is it a lot? Is it a little? Is it good for Saturday pizza or holiday cozonac? If you’ve asked yourself this question with the bag in hand, this guide is written for you.
The W—or flour strength (W)—is the most useful number on a technical sheet. It tells you, before you even knead the first gram, how much your dough can "handle": how much water, how many hours of fermentation, how much butter, and how many eggs. Below, we translate it into the language of the home baker, with concrete examples from the Artos range.
What the alveograph actually measures
W values come from a laboratory test performed with a device called an alveograph. The principle is easy to visualize: a standard dough is kneaded from flour and water, a thin sheet is cut from it, and the machine blows air under it until it inflates like a balloon and, finally, bursts.
The machine measures how much effort was needed for the balloon to grow and resist. That total effort is the W. A small W means a dough that yields quickly; a large W means a gluten that holds pressure for a long time. In your kitchen, that pressure is the gas produced by yeast or sourdough: the longer the fermentation, the more "shoulders" the dough needs to keep from collapsing.
The W scale, from 170 to 400, with Artos flours
Dry figures only come alive when linked to actual bags. Here's how to read the W scale across our range, milled at partner Italian mills:
- W170 — Stilistul 00: the delicate end of the scale. With 10% protein, it's the flour for fine pastries, biscuits, egg pasta, and puff pastries — doughs with short proving times, 1–4 hours. Don't ask it for pizza or long-fermentation bread: that's not what it was milled for.
- W290 — Clasicul 0S and Statornicul 1: the golden mean, everyday flours. Clasicul (12.5% protein) makes white bread, baguettes, focaccia, and even pizza, with direct fermentation of 4–8 hours or 12–24 hours cold. Statornicul 1 is its type 1 brother: the same W, but with added fiber (3.4 g/100 g) — for everyday bread, rolls, and rustic pizza.
- W330 — Maestrul 0R: our pizza flour, first and foremost. It has 13.5% protein and strength for maturation up to 24 hours: the crust remains easy to stretch, the rim rises beautifully. It works equally well for focaccia and calzone.
- W340 — Naturalul IF: a rarity — a strong W340 whole-wheat flour. Typically, bran cuts the gluten network and weakens the dough; here, the wheat is selected precisely so the flour remains strong (13.5% protein, 7.5 g fiber/100 g). It's the choice for whole wheat bread and sourdough bread.
- W370 — Paznicul 0RR: the territory of long fermentations, up to 48 hours, and indirect methods — biga, poolish. With 13.8% protein, it easily handles croissants, brioche, and cozonac.
- W400 — Artizanul 0M: the top of the scale, a Manitoba flour with a minimum of 14% protein and P/L 0.75. For cozonac, panettone, croissant, brioche, and babka — rich doughs that mature for 48 hours and more. A baker's trick: a few spoons mixed in strengthen a weak flour.
An honest mention: not all flours have a W listed on their specs. Rădăcina 2, our type 2 flour, does not have a declared alveographic W — for rustic bread and sourdough, it works wonderfully as is, and if you want long fermentations, you mix it with a strong flour, like Artizanul.
P/L: elastic or extensible?
On the same technical sheet, you'll also find the P/L ratio. If W tells you how strong the dough is, P/L tells you how it behaves: P measures tenacity — how much it resists when stretched — and L measures extensibility — how much it stretches before breaking.
A high P/L gives a "nervous" dough that shrinks back as soon as you stretch it — the frustration of anyone who has tried to stretch a crust that always returns to a ball shape. A low P/L gives a soft dough that stretches easily but doesn't hold its shape. As a reference, balance is usually sought around 0.5–0.7; ours — Artizanul at P/L 0.75, Stilistul at 0.80 — lean slightly towards tenacious, exactly what their doughs need.
Why protein matters
Protein on the label is the raw material for gluten. When hydrated and kneaded, it forms the elastic net that traps fermentation gas. This is why flours with 13% protein or more hold doughs that rise for days, while a 10% protein flour feels best in biscuits and puff pastries — where precisely low gluten provides tenderness.
Protein and W usually go hand in hand, but they are not the same thing: protein tells you how much net you can build, W tells you how well the net works under pressure. They are worth reading together, not just one of them.
Practical rule: long fermentation and rich dough require high W
If you remember only one thing from this entire guide, let it be this: the longer the fermentation and the richer the dough — butter, eggs, sugar — the higher the W you need. Fat and sugar weigh down the gluten network, and long hours of fermentation tire it out; only a strong flour can carry both all the way to the oven.
Translated into shelf decisions:
- short proving, tender dough — low W (Stilistul, W170);
- everyday bread and pizza, 4–24 hours — medium W (Clasicul or Statornicul, W290);
- pizza with serious maturation, up to 24 hours — high W (Maestrul, W330);
- sourdough whole wheat bread — strong whole wheat (Naturalul, W340);
- 48-hour fermentations, biga, poolish, sweet holiday doughs — very high W (Paznicul W370, Artizanul W400).
